Having Tea: Recipes and Table Settings
Tricia Foley  Catherine Calvert  Keith S. Morton (Photographer)
ISBN: 0517560070
Publisher: Crown Publishing Group
Pub. Date: July  1987
From the Publisher
What could be cozier on a blustery winter's day than a mug of tea by the fire with
freshly baked Irish soda bread slathered with sweet butter and tangy orange marmalade?
Or more invigorating on a crisp, cool afternoon in autumn than a picnic in the country
with sharp English cheeses; crusty white peasant bread; vegetable, cheese,
and apple tarts; and Thermoses of steaming warm tea?
Or a better way to celebrate the ripe berries of summer
than a dessert party tea in the garden with lemon-curd tartlets, raspberry shortcake,
raspberry sorbet, sugar cookies, and tea served in flowered china cups?

A cookbook and style book, Having Tea includes a range of stunning locations with
recipes, menus, table settings, and serving ideas for tea.
There are formal and elegant teas that ring in the winter holidays with rich dark fruitcake,
shortbread, brandy snaps, and sherried English trifle; a tea for one in the study with spicy ginger Bundt cake
and a plate of cookies; and tea for two in a loft, with slow-scrambled eggs,
cornmeal muffins and apple butter, and panfried tomatoes sprinkled
with fresh tarragon. Each menu provides suggestions for the ideal tea to suit the meal.

Since the American style of tea drinking originated in England, Having Tea
goes to the source to show two classic English tea rooms, tea at the Savoy Hotel in London,
and a tea dance at London's Waldorf. In addition, there are special sections on the history
and different varieties of teas, selections of teapots and tea services,
and directions for brewing the perfect pot of tea.
A final section, the "Tea Larder," offers ideas for tea trimmings
from honey to mint or ginger, tea sandwiches, and a directory of mail-ordersources for tea.

With approximately fifty recipes for tea sandwiches, crumpets, scones,
cookies, and cakes as well as hearty tea-time meals,
Having Tea will make you want to make having tea part of your day.
It shows how, far more than a beverage,
tea is a grand indulgence that provides food for the body and the soul.

Tea Time: Tradition, Presentation, and Recipes
M. Dalton Dalton King  Miniature Book Collection

Ideas from Better Homes & Gardens Magazine
Grace and elegance are the keynotes of the Tea table,
whether it's an intimate tête-à-tête for two or a buffet-style occasion for 20.
Invite guests the old-fashioned way -- with a handwritten invitation.
Arrange your finest china and silver atop a lace or crocheted tablecloth,
then gild the lily wherever possible.
Tea parties are inherently theatrical,
so think of the tea table as a stage set and give your fantasies free rein.
Some tips:
Lavishly sprinkle the tabletop with red, heart-shaped confetti or paper hearts.
Make abundant use of paper doilies by setting them atop cake plates and sandwich platters.
Tie rolled-up cloth napkins with big ribbons.
In place of regular sugar, fill the sugar bowl with rock crystal sugar (available at specialty food shops).
Float a single unsprayed rose petal in each teacup.
Serve tiny glasses of a nice dry or medium-dry Sherry.
Sweeten the mood with teatime tunes.
Possibilities include Strauss waltzes, melodious Mozart,
lighthearted Haydn, sprightly Vivaldi, sultry tangos, and gentle harp music.
Draw the curtains and serve tea by candlelight.
Present each guest with a tissue paper-wrapped red rose upon departure.

BRIDAL TEAS.  It is customary for the bride to host a luncheon or Tea for her bridesmaids.   Close friends of the bride’s family may also host a Bridal Tea.  This is a special time for the bridesmaids to get acquainted.  You might want to include the old tradition of serving (pink) cake for dessert that has a ring, coin, or thimble baked inside.  The old story says that the bridesmaids who gets the slice of cake containing the trinket will be the next to marry!  Your Tea can include the other traditions and use of fine china.  Make this a special time.

    Warm Winter Fruit Crisp
    Serves 8
A satisfying dessert for a chilly winter's night, this dark
and spicy fruit crisp is made with naturally sweet dried fruit
a concentrated source of energy. The crisp topping is made with
wholesome rolled oats and calcium-rich sesame seeds. Serve with Silken Nut Cream
    Prep Time: 15 minutes
    Baking Time: 45 minutes
    Filling:
    3 cups mixed, unsulphured, unsweetened
dried fruit including your choice of figs, apricots, currants, raisins, prunes,
    cranberries and bananas
2 cups apple juice or cider
    1-1/2 cups filtered water
2 herbal tea bags: lemon, orange, cinnamon rose, berry or apple flavored
    1/2 lemon
    1/2 teaspoon sea salt
2 large apples, peeled, cored and cut into medium chunks
    1 teaspoon cinnamon powder
    Topping:
    11/4 cups rolled oats
    1/4 cup sesame seeds
3/4 cup cornmeal or rice flour
1/2 cup date or brown rice sugar
    1/4 teaspoon sea salt
    1 tablespoon cinnamon powder
    1 tablespoon canola oil
    1/4 cup rice syrup, warmed
    2 tablespoons barley malt, warmed
    2 tablespoons apple juice
    1 tablespoon vanilla extract
    1 teaspoon almond extract
    1. Using a pair of kitchen shears, cut up dried fruit into bite-sized pieces. Place dried fruit, apple juice, water, tea bags, lemon and salt in a large saucepan. Bring fruit and liquid to a boil over medium heat. Reduce heat, cover and simmer fruit 10 minutes. Add apple chunks and cinnamon to saucepan, replace cover and simmer 5 minutes. Discard tea bags and lemon half. Pour fruit and cooking juice into a 2-quart baking dish. Liquid should just cover fruit. Add more water if needed. Cooked fruit can be prepared up to three days ahead.
    2. Preheat oven to 350°F. Spread oats and sesame seeds in a single layer on a baking sheet. Toast oats and sesame seeds in oven 5 minutes until lightly browned.
    3. Combine oats and sesame seeds with cornmeal, date sugar, sea salt and cinnamon in a medium-sized bowl. In a separate bowl, mix together canola oil, rice syrup, barley malt, apple juice and extracts. Pour liquid ingredients into dry ingredients and stir to combine.
    4. Spread oatmeal mixture evenly on top of prepared fruit. Place crisp on center rack of preheated oven and bake 25 to 30 minutes, or until topping is lightly browned and fruit juices bubble. Cool 15 minutes before serving.
